Royal kitchens worked with the knowledge of vaids and hakims, considering nourishment, digestion, balance and the body’s needs alongside flavour.
Our recipes took a different path from much of the royal cuisine that eventually entered restaurants and hotels. They never left the family kitchen. Their proportions, techniques and methods were preserved across generations.
